Baked Chocolate Cheesecake

An Oreo base, a water bath and a ganache lid. The one to make when it matters.

100 min A proper cook Vegetarian

Ingredients

  • 180g Oreo cookies
  • 60g butter, melted
  • 250g dark chocolate, chopped
  • 600g cream cheese
  • 135g sugar
  • 2 tbsp cocoa powder
  • 2 tbsp cornflour
  • 1 tsp vanilla extract
  • 180ml cream
  • Ganache: 200ml cream, 160g chocolate

Method

  1. Wrap the outside of a 20cm tin in a double layer of foil. Water gets in otherwise and the base turns to sludge.
  2. Blitz the Oreos, mix with melted butter, press into the tin, chill until firm.
  3. Melt the chocolate over simmering water.
  4. Beat cream cheese smooth, then sugar, cocoa, cornflour and vanilla. Fold in cream and melted chocolate. Stop as soon as it's smooth.
  5. Pour over the base. Stand the tin in a larger dish and pour in 4cm of hot water.
  6. 170°C for an hour. Then oven off, door ajar, 30-60 minutes — it sets as it cools.
  7. Out of the water bath, foil off, knife round the edge, cool, then overnight in the fridge.
  8. Ganache: heat the cream to a bare boil, pour over the chopped chocolate, stir smooth, pour over and let it drip down the sides.

Questions people ask about Baked Chocolate Cheesecake

How long does Baked Chocolate Cheesecake take?

About 100 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

What is the one thing to get right in Baked Chocolate Cheesecake?

Wrap the outside of a 20cm tin in a double layer of foil. Water gets in otherwise and the base turns to sludge.

What can I use instead of cream cheese in Baked Chocolate Cheesecake?

Use hung curd, thickened overnight in a cloth. Tangier and less sweet, so adjust the sugar.

Can I make Baked Chocolate Cheesecake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Baked Chocolate Cheesecake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Baked Chocolate Cheesecake?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Baked Chocolate Cheesecake?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
