Aam Panna

Boiled raw mango, roasted cumin, mint. The drink that makes forty degrees survivable.

30 min Some work Vegetarian

Ingredients

  • 2 raw green mangoes
  • 100g jaggery or sugar
  • 1 tsp roasted cumin powder
  • 1/2 tsp black salt
  • Salt to taste
  • A handful of mint leaves
  • Cold water to dilute

Method

  1. Boil the whole mangoes in water for 15 minutes until the skin wrinkles and they go soft.
  2. Cool, then squeeze the pulp out with your hands and throw away skin and stone. Boiling beats roasting here — you get more pulp and no bitterness.
  3. Blend the pulp with jaggery, cumin, both salts and the mint into a thick concentrate.
  4. That concentrate keeps two weeks in the fridge. Dilute one part to four parts cold water when you want a glass.
  5. Serve very cold. It should taste sour first, sweet second, salty last.

Questions people ask about Aam Panna

How long does Aam Panna take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of jaggery in Aam Panna?

Use brown sugar, or white sugar with a spoon of molasses.

Can I make Aam Panna ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Aam Panna vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

How long does home-made aam panna keep?

Best made and drunk the same day. Anything blended with fruit separates within a couple of hours, so stir or shake it before pouring.
