Two-Minute Mug Cake

One mug, a microwave, and it's done before you change your mind.

5 min Easy Vegetarian No oven needed

Ingredients

  • 4 tbsp maida
  • 3 tbsp sugar
  • 2 tbsp cocoa powder
  • 1/4 tsp baking powder
  • 3 tbsp milk
  • 2 tbsp oil
  • 1/4 tsp vanilla
  • 1 tbsp chocolate chips

Method

  1. Whisk the dry ingredients in the mug with a fork until no cocoa lumps remain.
  2. Milk, oil and vanilla in. Whisk until smooth, scraping the corners of the mug.
  3. Chocolate chips pushed into the middle.
  4. Microwave 70-90 seconds on high. Start checking at 70.
  5. Stop the moment the top looks set — 20 seconds too long turns it into rubber, and it keeps cooking in the hot mug.
  6. Eat from the mug with a spoon. It's not good cold.

Questions people ask about Two-Minute Mug Cake

How long does Two-Minute Mug Cake take?

About 5 minutes from starting to sitting down, and it is straightforward. That is start-to-finish, so it works on a weeknight when you have not planned anything.

What can I use instead of maida in Two-Minute Mug Cake?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Two-Minute Mug Cake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Two-Minute Mug Cake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make Two-Minute Mug Cake without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with Two-Minute Mug Cake?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
