Sweet Palmiers

Two ingredients. Puff pastry and sugar, and they look like you bought them.

30 min Easy Vegetarian

Ingredients

  • 1 sheet puff pastry
  • 3/4 cup sugar
  • 1 tsp cinnamon
  • Pinch of salt

Method

  1. Mix the sugar with cinnamon and salt. Scatter half over the work surface and lay the pastry on it — rolling the pastry ON sugar instead of flour is what caramelises the outside.
  2. Rest of the sugar over the top, pressed in with a rolling pin.
  3. Fold both long edges into the middle, then fold again so they meet, then close it like a book.
  4. Chill 20 minutes, then slice 1cm thick.
  5. Cut side up on a lined tray with lots of space. They spread a lot.
  6. 200°C for 12 minutes, then flip each one and give it 5 more so both sides caramelise. Cool on a rack — the sugar is molten.

Questions people ask about Sweet Palmiers

How long does Sweet Palmiers take?

About 30 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

Can I make Sweet Palmiers ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Sweet Palmiers vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

Do I need an oven for Sweet Palmiers?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Sweet Palmiers?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
