Sindhi Kadhi

Tamarind instead of curd, and vegetables cooked right in. Nothing like Punjabi kadhi.

40 min Some work Vegetarian

Ingredients

  • 1/2 cup besan
  • 2 tbsp tamarind pulp
  • 3 cups vegetables (drumstick, okra, potato, carrot, cluster beans)
  • 1 tsp cumin
  • 1 tsp mustard seeds
  • 10 curry leaves
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • Hing
  • 4 tbsp oil
  • Rice for 2

Method

  1. Fry the besan in oil on low for 6 minutes until it turns reddish-brown and smells roasted. Under-roasted besan tastes raw all the way through.
  2. Off the heat, whisk in 4 cups of water slowly so it stays smooth.
  3. Back on the heat with tamarind, turmeric, coriander powder and salt. Boil 15 minutes.
  4. Fry the okra separately and add it late so it doesn't go slimy. Add the other vegetables directly, hardest first.
  5. Simmer till everything is tender, 15 minutes.
  6. Tadka of cumin, mustard, curry leaves and hing. Steamed rice.

Questions people ask about Sindhi Kadhi

How long does Sindhi Kadhi take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of besan in Sindhi Kadhi?

Use chickpea flour is the same thing. At a push, rice flour binds but will not taste the same.

Can I make Sindhi Kadhi ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Sindhi Kadhi vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Sindhi Kadhi?

Steamed rice. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
