Scottish Shortbread

Three ingredients, fifty minutes in a low oven, cut into petticoat tails.

65 min Easy Vegetarian

Ingredients

  • 115g butter, softened
  • 55g caster sugar, plus extra for dusting
  • 40g cornflour
  • 130g plain flour
  • A pinch of salt
  • 1/2 tsp ground cardamom (optional)

Method

  1. Cream butter and sugar until pale, then add both flours and the salt.
  2. Bring together by hand to a smooth dough. Stop as soon as it comes together — worked dough goes tough, not short.
  3. Press evenly into a greased 20cm round tin, right to the edges. Fridge, 15 minutes.
  4. Prick all over with a fork and score into 8 wedges.
  5. 150°C for 50 minutes until pale gold, not brown.
  6. Cut along the score lines while warm, dust with caster sugar, then cool.
  7. Half a teaspoon of ground cardamom in the dough makes it a different biscuit entirely.

Questions people ask about Scottish Shortbread

How long does Scottish Shortbread take?

About 65 minutes from starting to sitting down, and it is straightforward. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Scottish Shortbread?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Scottish Shortbread ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Scottish Shortbread vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Scottish Shortbread?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.
