No-Bake Cheesecake

No oven, no water bath, nothing to crack. Just cold and patient.

30 min Some work Vegetarian No oven needed

Ingredients

  • 250g digestive biscuits
  • 120g melted butter
  • 500g cream cheese, room temperature
  • 1 cup icing sugar
  • 1 cup cream, cold
  • 1 tsp vanilla
  • 1 tbsp lemon juice
  • Fruit or jam to top

Method

  1. Crush the biscuits fine, mix with melted butter, press hard into the tin base. Chill 20 minutes.
  2. Beat the cream cheese with icing sugar and vanilla until smooth. Room temperature or you'll get lumps you can never beat out.
  3. In a separate bowl, whip the cold cream to soft peaks.
  4. Fold the cream into the cheese mixture gently — folding, not beating, keeps it light.
  5. Lemon juice folded in. It sets partly on the acid.
  6. Spread over the base, chill 6 hours or overnight. Fruit on top just before serving.

Questions people ask about No-Bake Cheesecake

How long does No-Bake Cheesecake take?

About 30 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in No-Bake Cheesecake?

Beat the cream cheese with icing sugar and vanilla until smooth. Room temperature or you'll get lumps you can never beat out.

What can I use instead of cream cheese in No-Bake Cheesecake?

Use hung curd, thickened overnight in a cloth. Tangier and less sweet, so adjust the sugar.

Can I make No-Bake Cheesecake ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is No-Bake Cheesecake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Can I make No-Bake Cheesecake without an oven?

That is exactly what this recipe is for. It uses a pressure cooker, a pan or the fridge instead of an oven, and the method here is written for that, not adapted from a baked version.

What do you serve with No-Bake Cheesecake?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
