40 min A proper cook Contains egg

Ingredients

  • 2 cups maida
  • 4 eggs
  • 1 onion, very finely chopped
  • 3 green chillies
  • 1/2 cup coriander
  • 1 tsp garam masala
  • 1/2 tsp black pepper
  • Oil to shallow fry

Method

  1. Dough: maida, salt, oil and water. Knead soft and smooth, rest 1 hour — it needs to be stretchy enough to roll paper-thin.
  2. Beat the eggs with onion, chillies, coriander, garam masala, pepper and salt.
  3. Roll one ball as thin as you possibly can into a large sheet. You should almost see through it.
  4. Pour a quarter of the egg mix in the centre, then fold all four sides in like an envelope, sealing the edges with water.
  5. Slide seam side down into shallow hot oil. Fry 3 minutes a side till golden and crisp.
  6. Cut into squares. Ketchup and raw onion.

Questions people ask about Mughlai Egg Paratha

How long does Mughlai Egg Paratha take?

About 40 minutes from starting to sitting down, and it is a proper cook. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of maida in Mughlai Egg Paratha?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Mughlai Egg Paratha ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

What do you serve with Mughlai Egg Paratha?

Roti or plain rice, with something sharp on the side: curd, pickle or sliced onion. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
