Madeira Cake

A plain, close-grained loaf that keeps a week. The one to have with tea.

70 min Some work Vegetarian

Ingredients

  • 175g butter, softened
  • 175g sugar
  • 250g self-raising flour
  • 50g ground almonds
  • 150ml milk
  • 1 tbsp apple cider vinegar
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • A thin strip of candied lemon peel

Method

  1. Milk and vinegar, 5 minutes to thicken.
  2. Cream butter and sugar until genuinely pale — several minutes. There is nothing else lifting this cake.
  3. Sift in flour and almonds alternately with the soured milk.
  4. Zest and vanilla, folded through.
  5. Lined loaf tin. 170°C for 20 minutes.
  6. Lay the candied peel on top and bake 40 minutes more. Putting it on at the start means it sinks.
  7. Cool in the tin 10 minutes, then onto a rack.

Questions people ask about Madeira Cake

How long does Madeira Cake take?

About 70 minutes from starting to sitting down, and it is a bit of work. A good part of that is unattended, so you can get on with something else once it is going.

What can I use instead of maida in Madeira Cake?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Madeira Cake ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Madeira Cake vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Madeira Cake?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.
