Fish Tikka

Twenty-five minutes including the marinade. Faster than chicken and harder to overcook if you watch it.

25 min Some work Non-vegetarian

Ingredients

  • 600g firm fish, in large cubes
  • 1/2 cup hung curd
  • 1 tbsp ginger-garlic paste
  • 1 tbsp mustard oil
  • 2 tsp kashmiri chilli powder
  • 1 tsp ajwain
  • 1 tsp chaat masala
  • 1 tbsp besan
  • 1 lemon

Method

  1. Use a firm fish that won't fall apart. Rub with lemon and salt first, rest 10 minutes, pat dry.
  2. Marinade: hung curd, ginger-garlic, chilli powder, ajwain, roasted besan, mustard oil. Only 15 minutes — longer and the lemon starts to cook the fish.
  3. Very hot pan with a little oil, cubes in with space between them.
  4. Three minutes, then turn once. Eight minutes total, that's all.
  5. Chaat masala and lemon. Mint chutney and onion rings.

Questions people ask about Fish Tikka

How long does Fish Tikka take?

About 25 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of fish in Fish Tikka?

Use any firm white fish, or paneer for a vegetarian version. Avoid delicate fish in anything that needs stirring.

Can I make Fish Tikka ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Fish Tikka vegetarian?

Yes. Replace the fish with king oyster mushrooms torn into chunks, or firm tofu pressed dry. Both want a hard sear first, and both go in at the very end, because neither needs more than a couple of minutes.

What do you serve with Fish Tikka?

Mint chutney and onion rings. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
