Coorg Pork Curry

Vinegar-dark, peppery and unlike anything else in Indian cooking.

80 min A proper cook Non-vegetarian

Ingredients

  • 800g pork with fat, cubed
  • 3 tbsp kachampuli or dark vinegar
  • 2 tbsp black peppercorns
  • 2 tbsp coriander seeds
  • 1 tsp cumin
  • 8 dried red chillies
  • 1 tbsp ginger-garlic paste
  • 2 onions
  • 1 tsp turmeric
  • 2 tbsp oil

Method

  1. Dry roast the peppercorns, coriander, cumin and chillies, then grind coarsely.
  2. Brown the pork in its own fat on high — very little extra oil needed. 12 minutes.
  3. Onions and ginger-garlic paste, then the ground masala and turmeric.
  4. 2 cups water, salt. Cover and simmer 50 minutes until the pork is completely tender and the fat has rendered.
  5. Vinegar goes in only at the end — added early it toughens the meat.
  6. Rest 15 minutes. Akki roti or rice.

Questions people ask about Coorg Pork Curry

How long does Coorg Pork Curry take?

About 80 minutes from starting to sitting down, and it is a proper cook. A good part of that is unattended, so you can get on with something else once it is going.

Can I make Coorg Pork Curry ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Coorg Pork Curry vegetarian?

Yes. Replace the pork with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.

What do you serve with Coorg Pork Curry?

Akki roti or rice. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
