40 min Some work Non-vegetarian

Ingredients

  • 800g chicken on the bone
  • 6 tomatoes, chopped
  • 2 tbsp ginger-garlic paste
  • 1 tbsp black pepper, crushed
  • 1 tbsp coriander seeds, crushed
  • 4 green chillies
  • 2 inch ginger, juliennes
  • 1/2 cup oil or ghee
  • Coriander

Method

  1. No onions. That's the defining thing about a karahi.
  2. Very hot oil, chicken in, seared hard on high for 10 minutes till browned.
  3. Ginger-garlic paste, 2 minutes.
  4. Tomatoes and salt, cover, high heat 12 minutes. They collapse and release enough liquid to cook the chicken.
  5. Uncover and cook off the water until the oil separates and rises, 10 minutes.
  6. Crushed pepper and coriander seeds, green chillies, ginger juliennes and coriander at the very end. Naan.

Questions people ask about Chicken Karahi

How long does Chicken Karahi take?

About 40 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of chicken in Chicken Karahi?

Use paneer, firm tofu or mushrooms. All three cook far faster than chicken, so add them in the last 5 minutes rather than at the start.

Can I make Chicken Karahi ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Chicken Karahi vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.
