Chicken Fajitas

Everything charred in one pan, everyone builds their own. Twenty-five minutes.

25 min Easy Non-vegetarian

Ingredients

  • 600g chicken, in strips
  • 3 capsicum of different colours, in strips
  • 2 onions, in strips
  • 2 tsp paprika, 1 tsp cumin, 1 tsp oregano
  • 1 lemon
  • 8 tortillas
  • Curd or sour cream, cheese, salsa

Method

  1. Toss the chicken with the spices, salt, pepper and lemon.
  2. Get the pan properly hot. Chicken in one layer, don't touch it for 3 minutes — the char is the flavour.
  3. Take the chicken out, then the peppers and onions on high for 4 minutes. They should blacken in spots and stay crunchy.
  4. Everything back together for 1 minute with a squeeze of lemon.
  5. Warm the tortillas on the flame.
  6. Serve in the pan, still sizzling, with everything else on the table.

Questions people ask about Chicken Fajitas

How long does Chicken Fajitas take?

About 25 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Chicken Fajitas?

Get the pan properly hot. Chicken in one layer, don't touch it for 3 minutes — the char is the flavour.

What can I use instead of chicken in Chicken Fajitas?

Use paneer, firm tofu or mushrooms. All three cook far faster than chicken, so add them in the last 5 minutes rather than at the start.

Can I make Chicken Fajitas ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Can I make Chicken Fajitas vegetarian?

Yes. Replace the chicken with paneer, firm tofu, mushrooms or soya chunks. All of them cook far faster than meat, so add them in the last five minutes rather than at the start, and keep the masala exactly as written.

What do you serve with Chicken Fajitas?

Serve in the pan, still sizzling, with everything else on the table. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
