Cheese and Herb Scones

No yeast, no rising. In the oven in twelve minutes and eaten in twenty.

30 min Easy Vegetarian

Ingredients

  • 3 cups maida
  • 1 tbsp baking powder
  • 100g cold butter, cubed
  • 1.5 cups grated sharp cheese
  • 1 tbsp mixed herbs
  • 1 tsp mustard powder
  • 1 cup cold milk
  • 1 egg to glaze
  • 1 tsp salt

Method

  1. Cold butter rubbed into the flour and baking powder until it looks like breadcrumbs. Cold everything, always.
  2. Stir in the cheese, herbs, mustard powder and salt.
  3. Cold milk added all at once, brought together with a knife. Handle it as little as possible.
  4. Pat out to 3cm thick — thick, not thin, or they won't rise tall.
  5. Cut straight down with a floured cutter. Never twist the cutter; twisting seals the edge and they rise lopsided.
  6. Egg wash the tops only. 220°C for 12-14 minutes. Split and butter while hot.

What do you serve with Cheese and Herb Scones?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
