45 min A proper cook Vegetarian

Ingredients

  • 450g chana dal, soaked 6 hours
  • 1 inch ginger, chopped
  • 6 green chillies
  • 1 tsp baking soda
  • 1/2 tsp turmeric
  • 3 tbsp powdered sugar
  • Juice of 2 lemons
  • 4 tbsp oil
  • 2 tsp mustard seeds
  • 8 garlic cloves, chopped
  • 1/4 tsp asafoetida
  • 2 tbsp coriander leaves
  • 2 tbsp grated coconut
  • Salt

Method

  1. Keep 4 tbsp of the soaked dal whole and grind the rest with chillies, garlic and ginger. Stir the whole dal back in — that's the texture.
  2. Soda, turmeric and salt in, then rest it 4 hours.
  3. Spread thin on a plate and steam 10 minutes at a time until it's all used up.
  4. Crumble the steamed cakes, then mix in the sugar and lemon juice.
  5. Crackle mustard seeds in oil, add ginger, then asafoetida, and pour it over. Coconut and coriander on top.

Questions people ask about Chana Dal Crumble

How long does Chana Dal Crumble take?

About 45 minutes from starting to sitting down, and it is a proper cook. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of garlic in Chana Dal Crumble?

Use 1/4 tsp garlic powder per clove at a push, added later so it does not scorch.

Can I make Chana Dal Crumble ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Chana Dal Crumble vegetarian?

Yes, and as written it is vegan too. Check your specific brands if that matters to you.

What do you serve with Chana Dal Crumble?

Roti or thepla, with curd. It serves two as written. Double everything to feed four, but use a wider pan so the food still browns rather than steams.
