35 min Some work Vegetarian

Ingredients

  • 240g plain flour
  • 150g sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp allspice
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/2 tsp ground ginger
  • 300ml soya or regular milk
  • 60ml coconut oil, melted and cooled
  • 1 tsp vanilla extract
  • Glaze: 150g icing sugar, 1/2 tsp cinnamon, 2 tbsp maple syrup, 1 tbsp milk
  • Crushed pecans

Method

  1. Sift the flour, sugar, baking powder, soda, salt and all the spices together.
  2. Whisk the milk, cooled coconut oil and vanilla separately. Cool it properly or the oil seizes into lumps.
  3. Wet into dry, stirred just until combined.
  4. Spoon into a piping bag and pipe into a greased doughnut tray, two-thirds full.
  5. 200°C for 10 minutes.
  6. Cool on a rack, then dip in the glaze — smooth and silky, not runny. More icing sugar if it's thin.
  7. Crushed pecans on top while the glaze is wet.

Questions people ask about Chai Doughnuts with Maple Glaze

How long does Chai Doughnuts with Maple Glaze take?

About 35 minutes from starting to sitting down, and it is a bit of work. Most of that is active, so read the method through before you start rather than chopping as you go.

What can I use instead of maida in Chai Doughnuts with Maple Glaze?

Use plain atta for a denser, nuttier result, or a 50/50 mix if you want to keep some lift.

Can I make Chai Doughnuts with Maple Glaze ahead of time?

You can prepare it a few hours ahead and reheat gently. It keeps two days in the fridge, though it is best on the day.

Is Chai Doughnuts with Maple Glaze vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Chai Doughnuts with Maple Glaze?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Chai Doughnuts with Maple Glaze?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
