Anzac Biscuits

Oats, coconut and golden syrup. Fifteen minutes and they keep for a fortnight.

30 min Easy Vegetarian

Ingredients

  • 90g oats
  • 90g desiccated coconut
  • 90g plain flour
  • 125g caster sugar
  • 125g butter
  • 1 1/2 tbsp golden syrup
  • 1/4 tsp baking soda
  • 2 tbsp boiling water

Method

  1. Mix the oats, coconut, flour and sugar in a bowl.
  2. Melt the butter and stir in the golden syrup.
  3. Dissolve the soda in the boiling water and add it to the pan. It foams up pale — that is what makes them light.
  4. Two minutes on low, stirring, then pour into the dry ingredients and mix to a dough.
  5. Spoonfuls onto a lined tray, 5cm apart. They spread a lot.
  6. 180°C for 10-12 minutes until golden. They firm as they cool, so take them out soft.

Questions people ask about Anzac Biscuits

How long does Anzac Biscuits take?

About 30 minutes from starting to sitting down, and it is straightforward. Most of that is active, so read the method through before you start rather than chopping as you go.

What is the one thing to get right in Anzac Biscuits?

Dissolve the soda in the boiling water and add it to the pan. It foams up pale — that is what makes them light.

What can I use instead of butter in Anzac Biscuits?

Use ghee or oil. Ghee has no water in it, so things brown faster and you may need slightly less.

Can I make Anzac Biscuits ahead of time?

Yes, and it is better for it. Cool it fully, refrigerate for up to three days, and reheat gently with a splash of water. The flavours settle overnight.

Is Anzac Biscuits vegetarian?

Yes, it is vegetarian. It is not vegan as written because it contains dairy; swap the dairy for a plant alternative and the rest of the method is unchanged.

Do I need an oven for Anzac Biscuits?

Yes, this one needs an oven. If you do not have one, look at the no-oven filter on the baking page: eleven of the bakes here are built for a cooker, a pan or the fridge.

What do you serve with Anzac Biscuits?

On its own, warm, with tea or coffee. Baking is chemistry, so scale it by weight rather than by eye: double every quantity, use a tin with roughly double the area, and expect to add ten minutes or so. Judge it by the skewer, not the clock.
